1. Combine onion with peppers and corn (if using) in ActiFry pan; drizzle with oil and sprinkle with taco seasoning. Cook for 8 minutes.
2. Add rice and beans. Cook for 6 minutes or until heated through.
3. Spoon rice and beans into bowls. Top with garnishes as desired.
Cooking Tips: • *For homemade taco seasoning blend: Combine 1 1/2 tsp each chili powder and ground cumin and 1/2 tsp each salt, garlic powder and onion powder • Use pouches of microwaveable brown rice if you don't have leftovers on hand • Warm leftovers and pack into thermoses for lunchtime and pack garnishes on the side
