Sour Cream and Onion Roasted Chickpeas

Ingredients

  • 1 can (540 mL) chickpeas, drained and rinsed
  • 1 ActiFry spoon liquid coconut oil or vegetable oil
  • 1 tbsp lemon juice
  • 2 tsp each onion powder and dried chives
  • 1/2 tsp each sea salt, dried dill and garlic powder

Preparation

1. Place chickpeas in ActiFry pan. Drizzle with oil. Cook for 30 minutes.

2. Whisk lemon juice with onion powder, chives, salt, dill and garlic in a medium heat-proof bowl. Add hot chickpeas and toss to coat evenly.

3. Return chickpeas to ActiFry and cook for 10 minutes or until browned and crisp. Spread on a tray to cool completely. Divide between lunchbox containers or zip-top bags.

Cooking Tips: • Store in an airtight container for up to 3 days • For a little 'cheesy' kick add in 1 ActiFry spoon of finely grated Parmesan or nutritional yeast
